Miles apart – Together at Heart

A few weeks ago, my friend Vika and her husband Andrey came to visit us in Portland for the weekend. There couldn’t have been a better time for that.

Before I get to share about the adventures we had, I would like to describe our friendship. I met Vika when we were both in fourth grade. We became the best of friends. We did everything you could ever imagine best friends would do, from eating ice cream late at night in parking lots to spending a week together exploring Hawaii. There were many ups and there were also downs, but through it all we always had each other’s backs. That’s what made it so unique and special.

This past summer we both got married and moved 1,247 miles away from each other. We both were busy setting up our new homes, getting used to a new city, and living life with our husbands. It was a lot harder to keep up with each other. It was easy to look back at the past and compare the present to it. To get upset at each other, and even give up on being a faithful friend. There came a moment for both of us where we had to choose to embrace the new season of our lives and of our friendship and stop dwelling in the past.

Embracing this new season in our friendship helped us grow and  become better friends in a whole different way, even though we live miles apart.

Some of the little things that we do to keep it going-

  1. Checking up on each other through txt or social media- Snapchat and Instagram have definitely made it easy.  
  2.  Calling each other by phone
  3. Sending each other pictures of the things that we do or the latest has been the recipes we try- We enjoy sharing the new recipes we try because both of us are still learning how to cook. Last week she shared a delicious quiche recipe, go check it out at the bottom of this post.
  4. Keeping each other in prayer
  5. Planing visits- We are planning to see each other hopefully during Spring Break in Moab, UT. Stay tuned! 

When they came to visit, we quickly picked up where we left off and enjoyed an adventurous weekend together.

Easy Vegetarian Quiche Recipe 

1 pie crust

2 eggs

3 garlic cloves

1 sweet onion

1/2 bunch of kale

1/4 cup of crumbled goat cheese

1/2 part skim ricotta cheese

Directions:

Caramelize the onions, add garlic and chopped kale( you may need to add a teaspoon of water to keep it cooking) 

Whisk two eggs and the ricotta cheese, salt, pepper and the veggies. Add it to the pie crust and add the goat cheese on top and bake for 12 min.
